Chili sin carne

Chili con carne and the vegetarian alternative chili sin carne is one of my favorite meals.
It can be cooked in one pot. This saves energy while cooking and cleaning the dishes.
The meal is very flexible when it comes to ingredients.
For example, the corn, carrots and bell peppers can be left out or replaced by other vegetables.
Meat lovers can also replace the meat substitute with mincemeat.
Even this can be done in one pot by first roasting the mincemeat in the pot before adding anything else.
- 1 piece onions
- 1 piece garlic
- 140 g carrots
- 200 g bell peppers
- 1 tbsp olive oil
- 2 tbsp tomato purée
- 400 g tinned tomatoes
- 4 dl bouillon
- 1 ts salt
- 0.5 ts pepper
- 30 g dark chocolate
- 400 g kidney beans
- 400 g corn
- 250 g quorn meat substitute
- 8 pieces tortilla flatbread
Instructions
- Cut the onions and garlic in small pieces. Cut the carrots and bell peppers into small cubes.
- Heat the oil in the pot.
- Steam the onions and garlic. Later, also add the carrots and chili peppers and continue to steam briefly.
- Add the tinned tomatoes,tomato purée, chocolate, corn and bouillon while stirring.
- Drain and rinse the beans in a colander and add them to the pot.
- Season with salt and pepper.
- Let it cook for 15 to 20 minutes.
- Add the meat substitute and continue cooking for eight minutes.

Heat the flatbread in the residual heat of the pot.
Wrap individual flat bread in aluminium foil and briefly put them in between of the still warm stove and pot.
It is important to shut down the stove or they will be burned quite fast.
Depending on the temperature of the stove and pot, you need to heat them between 0.5 and 3 minutes.
